Version Control

I have several projects underway and many of them are running fine. But now I'd like to refine them with a little more pizzazz. Once I open the project and make changes to it, my original code it lost. So I assume that using Windows Explorer to make a copy of the project folders before starting is in order. My question is will this be safe, in other words, will the new folder I start working with be in working order? I typically use full paths to point to files and such so I'm hoping this will be the safe method I need. I want to make version 2.0 be the new working folder, but I'd like version 1.2 to still be there just in case.
